Denomination: Amarone della Valpolicella DOCG.
Alcohol content: 16% vol.
Production area: a blend of the best grapes from the vineyard in the Valpolicella Doc area, locality Campiano, village of Cazzano di Tramigna.
Grape variety: 30% Corvinone; 40% Corvina; 30% Rondinella.
Grape harvest: in the first 10 days of October by hand. The grapes are picked and layed in small plastic boxes for about 2 month in special dry and well-ventilated rooms called “fruttai”.
Vinification: in the end of January the grapes are lost about the 45 % of the juice, from hire start the vinification.The maceration takes about 20 days at 23-28°C it depends on the vintage.The wine age for about 30 month in big barrel. After the bottling it age for minimum 10 month before to be selled.
Characteristics: very important red wine; deep ruby red verging on garnet; intense fruity bouquet of cherry and dried plum with a floral aroma of dried flowers and a hint of sweet Spices smooth and captivating in the mouth; extremely elegant full-body and long finish.
Food matches: excellent with all kinds of entrecote, grilled and on-the-spit meat dishes.
Temperature: serve at 20°-22°C.
