Varvaglione 1921 has been making wine for almost one hundred years, spanning four generations of the family. The company is based in Leporano on the Gulf of Taranto, in the famous Salento region.

With a focus on Puglia’s native grape varieties, Varvaglione’s extensive portfolio includes red wines made from Primitivo, Negroamaro, Malvasia Nera and Aglianico grapes and white wines made from Verdeca, Falanghina, Malvasia Bianca and Fiano grapes. Moreover, in the area of international varieties, Varvaglione makes a Chardonnay and a Sauvignon following traditional Salento methods.

Varvaglione 1921 is one of the oldest wineries in Southern Italy. Internationally and nationally recognized with a market presence in over 60 countries, Varvaglione 1921’s wines have won many awards.

 

 

GRAPE VARIETY blend of Negroamaro, Primitivo and Malvasia Nera.

ALCOHOL 15% vol.

PRODUCTION  The grape is left to raisin on the vine for about 20 days depending on the dehydration of the grapes. Short maceration prior to fermentation of de-stemmed grapes at temperature of 12-14°C to extract characteristic aromas. Fermentation for 20-25 days at controlled temperature of 24-26° follows. Then the wine is separated from the skins to start malolactic fermentation.Finally the wine ages for 6 months in barriques.

TASTING NOTES In the glass, Paralupi presents itself with a deep ruby red colour, which preludes a nose rich in aromas of ripe fruit like plums and blackberries, enriched by spicy notes of vanilla and chocolate, due to ageing in barrels. On the palate, it offers a full and enveloping flavour, with well-balanced velvety tannins and remarkable aromatic persistence.

PAIRING Ideal to pair with structured dishes such as red meats, game, and aged cheeses, Paralupi Appassimento is perfect for special occasions and to provide a high-level tasting experience. Serve at a temperature of 18°C to fully appreciate its complexity and aromatic richness.
