Grape Variety:
100% Nebbiolo.
Nebbiolo is the most noble grape in Piedmont and is only planted in the best vineyard sites. The grapes are hand harvested when fully ripe and are vinified immediately on their arrival at the winery. Aged for 18 months in traditional oak casks, it then rests in the bottle for another 6 months before being released on the market. This wine has a long ageing potential.
Tasting Note:
Garnet red colour with shades of orange that become more evident with the passing of years; a distinctive aroma, ethereal, intense, full of violet and liquorish with hints of vanilla, the taste is warm, full, dry and harmonious. Its austerity is linked to the presence of sweet and complex tannins.
Food Pairing:
Pairs well with boiled meats, roasts, grilled meats, braises, stews, wild game and aged cheeses.
