Sour cherries, raspberry, black pepper spice, to be enjoyed with salami’ was the agreed tasting note when we sampled the Monte Tondo Corvina earlier this year! On the lighter side of the spectrum, this 100% Corvina wine offers savouriness to accompany the juicy and inviting fruit character.
A rather unknown grape variety outside of the wines it is usually blended in (Valpolicella, Amarone and Bardolino), Pinot Noir fans will enjoy this wine. A mix of the red berries you might find atop a chocolate cake are what greet you on the nose. Below the fruit there is a light savoury spice that gives the wine some intrigue and this carries onto the palate. Delightfully smooth with a firm, fruity core, this light to medium bodied red will go perfectly lightly chilled with a plate of charcuterie.
Made using organically grown grapes by the family run winery Monte Tondo, this Corvina is an example of why the grape deserves its place in a single varietal wine. The wine spends 7 to 9 days on the skins, a relatively short amount of time for a red wine which helps retain it lightness and soft tannins. The wine only spends time in stainless steel before bottling which ensure a fruity and fresh glass.
