Denomination: Soave Superiore Docg Classico Foscarino.

Production area: vineyards in the Classico area of the Monte Foscarino.
Grape variety: 100% Garganega.
Grape harvest: second half part of October, beginning of November. Vinification: the steep slopes of Monte Foscarino are of volcanic origin and provide the vineyards with excellent exposure to the sun. Its unique microclimate produces the exceptionally high quality grapes used to make the Soave Superior Docg Classico “Foscarin Slavinus”. Part of the grapes been left on the vines 15 day longer, to get a longer maturation and a higher concentration of the sugar, more complexity and more structure.
After handpicking, the grapes undergo soft pressing and maceration with the skins for 24-36 hours at 10°C. Fermentation lasts for at least 36 hours, after which the wine is slowly poured from the tap and finishes fermentation in large 50 hl tonneaux.The wine matures for one month in big barrel and then in stainless steel tanks for about 1 year and ages in bottles 6 months before going into the market.
Characteristics: clear yellow with gold highlights.The nose is very fine, with aromas of exotic fruit, white pepper, vanilla and a persistent mineral note. On the palate is delicate and in balance, full and with a good minerality.
Food matches: excellent with nourishing first courses and grilled meats.
Temperature: serve at 12-13 °C.
