Monte Tondo’s Casette Foscarino is a highly acclaimed, 100% Garganega Soave Classico from Veneto, Italy, known for its volcanic mineral backbone, rich texture, and intense fruit flavors like apricot, pear, and lemon verbena. It is often described as complex, balanced, and a great value, typically featuring notes of honey, vanilla, and a long, saline finish.

Production area: Monte Foscarino, in the Casette locality.
Grape variety: 90% Garganega and 10% Trebbiano di Soave.
Grape harvest: the harvest is made in the first half part of October. The vineyards are situated in the Foscarino Hill, in the locality called “Casette”, in the most Classic Area in Soave. The soil is basaltic of volcanic origin.
Vinification: the grapes are soft pressing at low temperature and macerated ( at 10-12 °C for 12 hours) it depends on the maturation of the grapes. After the soft pressing of the grapes, the most is clarify an the fermentation take place at 18°C and after that the wine is aged in barriques and tonneaux (of 225 lt and 500 lt) of 3-4 years for about 6-8 months. After that, the wine is decanted for ageing in stainless steel tank for 4-5 month. After the bottling, the Casette Foscarino age for minimum 6 month before the selling.
Characteristics: a Soave Classico Crù, straw-yellow with golden highlights; intense exotic fruit bouquet laced with a hint of honey, scents of vanilla, dried fruit and marked mineral aroma; full-bodied, rich and smooth on the palate.
Food matches: excellent with first course fish dishes elaborated with vegetables; fish soups; and soft cheeses.
Temperature: serve chilled at 10°-12°C.
